International Sherry Week 2026 is finally here!
From 2 to 8 November, we celebrate seven days dedicated to discovering and enjoying the wonderful world of Sherry.
To mark this year's celebration, we're sharing a collection of recipes kindly provided by Anne Lancaster, showcasing the versatility of Sherry wines and Sherry vinegar in the kitchen.
We begin with a Green Leaf Salad with Shaved Manchego and Sherry Vinegar Dressing.
Fresh salad leaves, delicate shavings of Manchego cheese and a tangy Sherry vinegar dressing come together in a wonderfully balanced combination of flavours.
Simple to prepare and incredibly versatile, this salad is a delicious accompaniment to grilled meat, omelettes, tuna, chicken or pasta.
Salad Ingredients
- 5 oz (approximately 140 g) mixed salad leaves, such as oak leaf lettuce, lamb's lettuce or butter lettuce
- ½ cup sliced radishes or diced cucumber
- ½ cup finely chopped shallots
- Approximately 3 oz (85 g) Manchego cheese, shaved, or more if preferred
Dressing Ingredients
- 2 tablespoons Sherry vinegar
- 1 tablespoon finely chopped shallot, or 1 garlic clove, minced or crushed
- 1 tablespoon Dijon mustard
- 1 tablespoon extra virgin olive oil
- Sea salt and freshly ground black pepper, to taste
Method
- Prepare the Sherry vinegar dressing
In a bowl, whisk together the Sherry vinegar, finely chopped shallot or garlic, and Dijon mustard.
Slowly drizzle in the extra virgin olive oil, whisking continuously until the dressing is well combined, slightly creamy in appearance and emulsified.
- Adjust the seasoning
Dip a salad leaf into the dressing and taste.
For a sharper flavour, add a little more Sherry vinegar. For a milder, more olive oil-forward flavour, add a little more olive oil.
Season with sea salt and freshly ground black pepper to taste.
- Dress the salad
Place the mixed salad leaves, sliced radishes or diced cucumber, and finely chopped shallots in a large salad bowl.
Add most of the dressing and toss gently until the leaves are evenly coated. Add more dressing if needed.
- Add the Manchego
Finish by scattering the shaved Manchego cheese over the salad.
Serve immediately.
